La Fin du Monde means “the end of the world,” and it might just be the end of your search for the perfect Belgian tripel. Brewed by Unibroue in Chambly, Quebec, this is one of the most decorated beers in North America, including a gold medal at the 2024 World Beer Cup. It earns every bit of it.
The basics
- Brewery: Unibroue (Chambly, Quebec, Canada)
- Style: Belgian Tripel
- ABV: 9.0%
- IBU: 19
What to expect
This is a bottle-conditioned, triple-fermented ale, which means live yeast in the bottle keeps developing flavor long after packaging. It pours a slightly hazy gold with a frothy white head that sticks around.
The aroma is a floral, bready bouquet: honey, coriander, and warm malt. On the palate it is layered and complex without ever getting heavy. Expect candied orange peel, coriander, and lemon up front, building into black pepper, banana esters, and clove-like warmth. The finish is the real trick: sweet and decadent for a moment, then dry and clean, so the 9% ABV never feels cloying. Serve it cool, around 53 to 57 degrees, and give it a proper glass so the aromatics can open up.
Our rating
